It’s fall, y’all!
Okay, okay… you caught me. It’s pretty sunny and mild here in California, BUT… it’s still fall, and to honor the season, I’ve got a delicious (and warm) chowder recipe for you today.
This recipe is incredibly simple, AND the ingredients cost way less than eating out (just sayin’).
Here’s how to whip it together:
🌽 Chop 1/2lb red potatoes and bring to a boil until softened.
🌽 Sauté 1 tbsp olive oil with 1/2 onion (chopped) and minced garlic in skillet.
🌽 Add bacon to skillet and cook until crispy (leave grease in pan).
🌽 Remove bacon and chop.
🌽Add 8oz light buttermilk, 4oz chicken broth, and 4oz plain Greek yogurt to skillet with onions and garlic. Stir well and bring to a boil.
🌽Stir in 20oz white & gold sweet corn, cooked potatoes, and bacon.
🌽Season with salt, pepper, and chopped fresh thyme.
🌽Bring to a boil then serve topped with chives and more bacon.
🌽Remove and enjoy this deliciousness!
