Not going to lie…Pizza was not the original plan for this blog post #realtalk. Earlier this week I made Pineapple Fried Rice, Samosa Potatoes, and Orange Cauliflower for a dinner party. However, I am far from perfect and may or may not have peeled off the corner of my pinky finger while preparing ginger for the fried rice 😱. Needless to say, from that point on I was a hot mess in the kitchen with my finger taped up and my husband and friend helping me so that our dinner party could start on time.
The food came out great, so you’ll have to watch out for those recipes in the future! BUT as they say if you didn’t take pictures, it didn’t happen! So here we are…PIZZA!
Pineapple on pizza is one of the best combinations in life. However, I know I am in the minority of people who agree with that! My husband hates it, so don’t feel like you have to try it. You can just ignore the pineapple, or add any other toppings you like: Jalapeño, Spinach, Mushrooms, you name it!
Side note: this week was a crazy week for me, so unfortunately didn’t get to make my own crust. Next time though, I will be using one of Jazzy’s Pizza Crust Recipes inside my Your Dinner Is Planned Membership (weeks 3 & 10 feature Pizza Crust Recipes).
My waistline and soul wishes I spent the last 25 years making homemade pizzas instead of mindlessly ordering for delivery! Even though there is nothing wrong with ordering delivery, I have decided it no longer serves me. I am happy to have discovered this particular "Za" as it was easy to make, delicious, and much healthier than eating from a cardboard box and regretting it later.
INGREDIENTS:
Produce:
1/2 Head of Cauliflower
1/2 Yellow Onion (diced)
1/4 cup Cilantro (chopped)
1/2 cup Pineapple (roughly chopped)
Baking & Spices:
1 Teaspoon Garlic Powder
Oil, Vinegar, & Condiments:
2 Tablespoons Coconut Oil (Separated)
1/2 Cup BBQ Sauce
2 Tablespoons Siracha
Other:
Pizza Dough
1/2 Cup Vegan Mozzarella
INSTRUCTIONS:
1. Preheat oven to 400 degrees
2. Chop 1/2 head of cauliflower into bite size pieces
3. Place cauliflower on baking sheet
4. Toss cauliflower with 1 teaspoon garlic powder and 1 tablespoon Coconut Oil.
5. Roast in oven for 20 minutes, flipping at 10 minutes.
6. While cauliflower is roasting, dice 1/2 onion.
7. Heat 1 tablespoon coconut oil with 1 tablespoon vegan butter in small sauté pan on medium low.
8. Once pan is hot, add onion and a dash of salt and pepper.
9. Cook onions until slightly caramelized, stirring occasionally (approximately 10 minutes).
10. Prepare remaining ingredients: Chop 1/4 cup cilantro and 1/2 cup pineapple, mix together 1/2 cup bbq sauce and 2 tablespoons of Siracha, and measure 1/2 cup of vegan mozzarella cheese.
11. Once cauliflower is done, roughly chop, so that the pieces are a bit smaller.
12. Combine sauce, cauliflower, and carmelized onions in a bowl.
13. Prepare pizza dough per package instructions.
14. Spread cauliflower mixture evenly over pizza crust.
15. Top with cheese, pineapple, or any other toppings of choice.
16. Bake per pizza dough package instructions (until crust is golden brown, and vegan cheese is melty).
17. Sprinkle cilantro over cooked pizza.
18. Cut and serve! (Serving Size: 4…unless you are in my house…then it is 2. We eat A LOT of pizza 🤣).
