Meatless Monday: One Pan Pasta

Is there anything better for a Saturday Date Night at home then Pasta? Especially after binge watching Netflix all day!?

It takes a lot to get me to cook on the weekends, and that is saying a lot because I love to get my hands dirty in the kitchen. But, I also LOVE going out to eat. Fine Dining is one of my favorite things to do. So, I try and get my husband to take me out to dinner as much as possible. However, this weekend, we found ourselves really craving a day glued to the couch.

We found our binge-worthy show of the moment, Quantico, and posted up on the couch for a solid 8 hours. Yes! So ideal. As the day continued to slip away from us, the thought of throwing dinner together felt like a lot of work (why is doing nothing so exhausting?!). However, I remembered I had the ingredients to throw together this One Pan Pasta Dish. Wifey for the win!

Pasta just feels fancy, even though it is so easy! The best part about this...hardly any dishes! I would have had much less dishes, but I love to get organized and prep everything in advance. That way it feels like I am cooking in a TV show. I watched way too many episodes of Rachel Ray's 30 Minute Meals growing up!

This would be a great recipe to serve to a crowd. You could even turn this into a perfect Pasta Bar. You could include toppings for non-vegan friends (like crispy bacon and parmesan cheese) or add additional vegan toppings like cherry tomatoes or toasted pine nuts. 

Enjoy!

Produce:

1 Shallot (Diced)
5 Cloves of Garlic (Minced)
1/2 Cup Fresh Basil (Julienned)
1-2 Cups Sliced Mushrooms
3/4 Cup Frozen Peas

Oil, Vinegar, & Condiments:

1 Tablespoon Olive Oil
Salt, Pepper, & Red Pepper Flakes (To Taste)

Other:

1 1/2 Cup Almond Milk
1/4 Cup White Wine
2 Cups Vegetable Broth
1 Package Pasta

INSTRUCTIONS:

1. Heat large sauce pan on medium.
2. Add olive oil to pan.
3. Add shallots, mushrooms, peas, garlic, and salt and pepper to pan. Sautée for 2 minutes.
4. Add white wine, and cook down for 2 minutes.
5. Add vegetable broth and almond milk, and stir, combining throughly.
6. Add the pasta to the mixture, and continue to stir until pasta is under liquid.
7. Let cook for 15-20 minutes, stirring frequently, until most of the liquid cooks down.
8. Turn off heat and add basil and red pepper flakes, combine throughly. 
9. Serve!
