Meatless Monday: Overnight Oats

I know, I know…this is “Your Dinner Is Planned.” However, some nights I like to get a little extra organized and double down by preparing breakfast for the week. If you are anything like me, you always make better decisions when starting your day with a healthy breakfast. Because you have so many easy and time-saving dinner recipes included in your membership, you’ll have plenty of extra time to incorporate this into your weekly routine.

Without further adieu, I’d like you to meet my new best friend in health, OVERNIGHT OATS. If you haven’t made overnight oats yet, stop everything you are doing and do so tonight! It is seriously the easiest thing to make, there is no cooking involved, and it is a great way to fuel your day properly. Just dump all the ingredients, mix together, and chill overnight. Yes, it IS that easy! This recipe is super customizable. You can and SHOULD switch it up a bit (makes approximately 4-6 servings and it is best if enjoyed within 3 days of making). This recipe is just for the base, so you can add anything you want to it! I’ve included two variations below (my favorite and Jazzy’s favorite)! ENJOY- Jilly

BASE INGREDIENTS:

Baking & Spices:
3 Tbsp Honey (or Maple Syrup)
1 Pinch of Salt
3 Cups Rolled Oats
2 Tbsp Chia Seeds 
1/2 tsp Vanilla Extract

Refrigerated:
1 1/2 Cups Almond Milk (unsweetened)

INSTRUCTIONS: 
1. Combine all base ingredients into a large bowl. Mix Well.
2. Add additional ingredients.
3. Cover and chill overnight.
4. Serve in a bowl OR separate individual servings into mason jars.
5. Add toppings and chow down!

JILLY'S favorite variation - Dark Chocolate Raspberry

ADDITIONAL INGREDIENTS
1 Cup Fresh Raspberries
1/3 Cup Dark Chocolate Chips

INSTRUCTIONS:
1. Follow base instructions, and add additional ingredients in step #2.

JAZZY'S favorite variation - Carrot Cake

  
ADDITIONAL INGREDIENTS
3/4 Cup Grated Carrot (approx. 2 medium carrots)
1-2 Teaspoon Cinnamon

TOPPINGS
1/4 Cup Chopped Walnuts
2 Tbsp Coconut Flakes

INSTRUCTIONS:
1. Follow base instructions, and add additional ingredients in step #2 and toppings in step #5.
